OH! I LOVE COOKING

CHICKEN PEPPERCORN






This is my favorite recipe . I tried it many times especially during weekend. If you like it for dinner you can prepare it ahead of time. Roasting the chicken at a lower temperature (300 degree fahrenheit or 150 degree celsius) results in a more tender chicken with a crisp skin.



  • 1/2 cup olive oil
  • 1/4 cup lemon juice(do not substitute)
  • 1 kilo chicken, cut up or use choice cuts
  • 1 tbsp coarse salt
  • 1-2 tablespoons peppercorns, crushed




PROCEDURES:


  1. In a large bowl, combine olive oil and lemon juice. Marinate chicken in mixture for at least 2 hours.
  2. Drain chicken pieces. Rub salt all over chicken and sprinkle crushed peppercorns.
  3. Roast in a turbo-broiler at 350degree fahrenheit for 15-20 minutes.
  4. Turn chicken over and roast the other side for another 15 minutes or until done.
  5. Or if not in a hurry, roast chicken in turbo broiler at 300degree fahrenheit or 150degree celsius for 45 minutes to one hour on one side and another 45 minutes to one hour on the other side, skin side up. The slow cooking makes for a more tender chicken.
